Lobster + Fresh Mozzarella Chopped Salad

Description

a simple and fresh salad with boiled lobster, crisp vegetables, and fresh mozzarella


Ingredients

Scale
  • 2 lobster tails, if using frozen be sure they are fully defrosted
  • 1/2 cup fresh mozzarella (you can use the balls cut in half, or cubes of a large ball)
  • 1/2 seedless cucumber, sliced into quarters
  • 1 bell pepper, minced
  • 1 large beefsteak tomato, cubed
  • 1 head of romaine lettuce, sliced
  • 1/2 cup hearty olives such as sicilian
  • generous glug of olive oil
  • juice of a small lemon
  • few grinds of fresh cracked pepper
  • large pinch of flaky salt, such as Maldon
  • pinch (1/2 tsp) of dried herbs such as oregano, basil and rosemary

Instructions

1. To start, bring a large pot of water to a rolling boil. Salt the water liberally, then add the lobster tails.

2. Cook depending on size. Mine were 6oz each, and they were done in 7 minutes.
3. Once they are completely cooked through, place your tails into an ice bath to chill.
4. Then, remove the meat from the shell. I have found the the easiest way to do this is with scissors. Cut down the middle of the lobster (the inside, softer portion vs the hard exterior shell). Then break open the shell and pull out the meat. 
5. You can leave the tails whole if you'd like, but I chopped them into large chunks so they would be dispersed through the salad. Place in a large bowl.
6. Next, add all of the remaining ingredients into the lobster bowl, except the romaine lettuce. Place this into the fridge for 15-20 minutes and let it hang out.
7. At this point, you can store the salad until you're ready to eat (1-2 days), or you can add the romaine lettuce, toss, and enjoy! Taste to make sure it's well dressed, and adjust accordingly.
